500g caster sugar
Zest and juice of 1 orange (approx 4 tbl sp)
75ml pimms (3 shots)
Heat the oven to gas 4.
Put the currants, sugar, zest and juice in a oven proof dish. Stir a little to mix. Cook in the oven for 45 minutes until juicy and syrupy.
If you have an icecream churner, churn until ice crystals start to form, then freeze.
