100g butter
100g caster sugar
¼ tsp salt
100ml milk
1 egg
1 tsp vanilla essence
Jam and cream (or strawberry purée and cream fraiche) and strawberries to serve
Preheat the oven to gas mark 7.
Put the flour, butter, sugar and salt into a food processor and pulse until it is combined. If mixing by hand, rub the butter into the flour until the mixture resembles bread crumbs. Stir in the sugar and salt.
Put the rounds onto a floured baking tray or cover the tray with a silicon liner and brush the top with a little milk, or beaten egg. Cook for 12-15 minutes until risen and browned. Cool on a wire rack.
