1 tblsp ground ginger
1 tsp bicarbonate of soda
200g castor sugar
115g unsalted butter
85g golden syrup
1 egg
35g stem ginger drained and finely chopped
3 baking trays, lined or greased well
Preheat the oven to gas 3/170 C.
Put the butter and syrup in a pan over a low heat and melt gently. Once melted, set aside to cool. You can pour it into a cold bowl. It should be just warm and still liquid.
Pour the syrup mixture into the dry ingredients. Break the egg up with a fork and add with the stem ginger. Mix well.
