225g self raising flour
Pinch of salt
100g caster sugar
125g glace cherries
1 egg
Half tsp vanilla extract
5 tbl sp milk
4 - 6 tsp lemon curd
Grease and line a large loaf tin (4.5 in wide, 8.5 in long, 2.5 in deep).
Preheat the oven to Gas 4 (180 degC).
Quarter the cherries and wash off the sugar syrup. Pat dry with kitchen paper.
Spoon the lemon curd in a line down the centre of the loaf tin, not touching any of the sides.
