1 teaspoon baking powder
Half teaspoon salt
75 g Cheddar or Red Leicester cheese
Basil to taste (tablespoon of dried)
Chilli powder to taste (quarter to half a teaspoon)
50g butter
1 large egg
250ml milk
2 tablespoons tomato puree
Preheat the oven to 200°C. Line a 12 whole muffin tin with cases.
Mixed together flour, baking powder, salt, basil and chilli. Add most of the cheese, reserving a little for the top.
Put in wet ingredients in with the dry ingredients and stir together.
Bake in the oven for 18 to 20 minutes until well risen and lightly browned on top.
Cool on a wire rack. Serve warm with butter or cold.
