3 large eggs (I used 5 small free range bantam eggs to get a lovely yellow colour)
150g caster sugar
150g self raising flour
½ tsp baking powder
This recipe uses a madeleine tin. Mine is a 9 cake tin and the mixture makes 3 batches. It's best to make the mixture in a clear bowl if you can.
Preheat the oven to gas 7.
Melt the butter. While it's melting grease and flour the tin, making sure to get the butter into the moulding. Tap off any excess flour.
Ease out of the mould using a butter knife and cool on a wire rack.
