160g caster sugar
160g brown sugar
2 eggs
¼ tsp vanilla extract
380g plain flour (also works well with a mixture of spelt, rye and wheat free)
1 tsp salt
1 tsp bicarbonate of soda
½ tsp ground cinnamon or mixed spice
110g rolled oats
220g raisins, sultanas or cranberries
Cream together the butter and the sugar until pale, light and fluffy.
Beat in the vanilla extract.
Mix together the flour, salt, bicarbonate of soda and spice. Stir in the oats.
Divide the mixture into approx 20 evenly sized balls and flatted slightly on the tray. Leave enough room for spreading. (Mixture is approx. 1,400g).
