1 ½ tsp almond essence

Whisk the egg whites until they hold a stiff peak. Preheat the oven to gas 4.

Mix together the ground almonds, caster sugar and almond essence. Fold the almond mixture into the egg whites gradually, until it is all combined.
Line a tray with rice paper, or baking paper, and pipe the mixture onto the tray. Leave plenty of space.
Top each biscuit with a split almond and brush with egg white. Bake for 20-25 mins until beginning to brown. Cool on a wire rack, before completely cool, remove baking paper (if using).
