½ tsp salt
½ tsp mustard powder
¼ tsp cayenne pepper/chilli powder
1 tsp baking powder
25g butter
150g grated mature Chedder/Red Leicester
1 large egg
Milk
Preheat the oven to gas 7.
Mix together flour, salt, mustard powder, pepper and baking powder.
Turn out onto a lightly floured board and knead gently until it all comes together. Gently flatten into a circle 6 inches across. Brush the top with a little milk and sprinkle with the remaining cheese. Mark the round into six wedges with a knife.
Cool on a wire rack and east fresh.
