250ml sunflower oil
4 large eggs
225g light brown sugar
200g grated carrots
300g self raising flour
2 tsp baking powder
1 tsp mixed spice
1 tsp ground ginger
Icing
50g soft butter
25g icing sugar
250g full fat cream cheese
3 drops vanilla extract
Preheat oven to gas 4.
Line the base of two sandwich tins with baking paper and grease the tins.
Whisk together oil, eggs and sugar until it thickens.
Fold in carrots into the sugar mixture, followed by the flour mixture.
Split the mixture between the tins and bake for 35 mins. Cool on a wire rack.
