2 tsp baking powder
1 tsp bicarbonate of soda
½ tsp salt
3 tbl sp sugar
2 large eggs
375 ml buttermilk
4 tbl sp unsalted butter, melted
300g blueberries (optional)
Serves 4
Serve with maple syrup and bacon or lemon and sugar
Put the pan on to heat up (5 on my hob dial)
Mix together dry ingredients. Beat in the rest of the ingredients, the batter should have some lumps left in. Stir in blueberries if using.
Depending on how big you want the pancakes to be, use a ¼ cup or a ½ cup measure the batter into the pan. If it is really thick, you may need to spread it slightly with a spatula.
