3 eggs
300g bananas (about 3 bananas)
420g plain flour
1 ½ tsp baking powder
1 ½ tsp bicarbonate of soda
1 ½ tsp ground cinnamon
1 ½ tsp ground ginger
210g unsalted butter
8 inch square cake tin, greased and floured, or lined
This is a really good way to use up bananas that are very ripe and starting to go squashy. It's a really easy recipe.
Preheat the oven to Gas 3.
Beat in the sugar and eggs together. Mash the bananas with a fork and then beat into the sugar mixture.
Pour the mixture into the tin and level the top.
