500g strong white bread flour
2 x 7g packets of fast action dried yeast
50g caster sugar
40g soft unsalted butter
2 large eggs
Large pinch of salt
150ml lukewarm milk
100ml water (plus an extra 40ml added slightly later)
To finish
Icing sugar
Jam
Cream
Put all the dough ingredients in a large bowl and mix by hand until you have a sticky dough, work in the extra 40ml water. Work the dough in the bowl for 5 minutes until you are sure all the ingredients are evenly mixed.
Leave to cool on a wire rack before icing and decorating.
