100g soft brown sugar
100g self raising flour
0.75 of a teaspoon ground mixed spice
2 large eggs
2 eating apples
Brown sugar for sprinkling
Preheat the oven to gas mark 4.
Butter and line the base of a 7 inch round cake tin.
Mix the flour and mixed spice. Add the butter, brown sugar and eggs and beat well.
Chop 1.5 apples into small cubes and stir into the mixture. Slice the last half apple into six or eight pieces.
Spoon the cake mixture into the tin. Arrange the apple slices on top. Sprinkle a little bit of brown sugar over the top of the apples.
