Filling
50g soft butter
50g light brown sugar
½ tsp mixed spice
50g chopped candied peel
100g currants
Glaze
1 egg white
Caster sugar
Preheat the oven to gas 7.
Beat the butter until very soft. Mix in sugar, spice, peel and currants.
Carefully remove from the baking tray with a slice and cool on a wire rack.
